Pig - The Magical Meat

Pig is such a magical animal. So versatile. Pork. Ham. Bacon. Prosciutto (a.k.a. super-bacon). Anyway....Sam and I have switched our annual December bakeoff to a roast-off.

roastpork001.jpgBest crackle ever. It was thin and crispy with a delicate layer of fat. Sort of like Scarlett Johansson.

roastpork002.jpgThe secret is to perforate and salt the meat. Then put it out in the sun for a day. Counterintuitive, I know. But it works. We didn't get sick at all.

Lisa: No.
Homer: Pork chops?
Lisa: Dad, those all come from the same animal.

you left the fresh pork in the sun for 1 day? i know they do that in some countries but i always imagined it to be fatal
